Callipo Ventresca fillets are obtained from the ventral muscle bundles, which are saturated with fat and therefore softer and more flavorful. The result is a high-quality, premium product that will delight even the most discerning palates. Processing is carried out entirely in Italy and strictly by hand, following the ancient tradition handed down by the Callipo family for five generations. Each employee engraves her own initials on the fillets to guarantee authentic craftsmanship, quality, and product traceability.
