Tagliatelle are widespread throughout Italy and are part of the family of long, flat pasta.

They originate from the regions of northern Italy, in particular from the Emilian gastronomic and culinary tradition.

The Emilian origin of Tagliatelle is demonstrated by their presence in popular sayings and expressions rooted among the Emilian people. We have an example of the deep Emilian roots of Tagliatelle in "La scienza in cucina e l’arte di mangiar bene" by Pellegrino Artusi: "Conti corti e tagliatelle lunghe, say the Bolognese, and they are right, because the conti corti frighten the poor husbands and the tagliatelle corta attest to the inexperience of those who made them and, served in this way, seem like leftovers from the kitchen."

Their natural versatility makes them tasty with all types of seasoning: they are excellent as dry pasta or pasta flans, perfect with fish and shellfish based sauces, butter, white sauces based on soft cheeses and cream with the addition of curry or saffron.
