The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located right in the heart of Gragnano. In a monumental building from the early 1800s, 50 quintals of pasta are produced daily in full compliance with the artisanal method. The best durum wheat semolina arrives and is analyzed at each delivery to verify that it has the characteristics of excellence required for proteins, gluten and ash. The dough and pre-dough are vacuum-packed, very slowly and using the purest water from the Lattari Mountains of Gragnano. The drawing is exclusively bronze and the drying lasts from 24 to 52 hours, depending on the format, with temperatures that never exceed 48 degrees.
The rigatoni of Afeltra, made with carefully selected wheat semolina and from 100% Italian wheat, are mixed with water from the Lattari Mountains, bronze-drawn and dried slowly for up to 48 hours.
Rigatoni are among the most famous shapes of Italian pasta, loved for their external grooves that can embrace sauces and their hollow interior that also makes them perfect for timbales or baked pasta.
Try them with a simple tomato or vegetable sauce, or in a more autumnal recipe with a sauce based on porcini mushrooms.
