The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located right in the heart of Gragnano. In a monumental building from the early 1800s, 50 quintals of pasta are produced daily in full compliance with the artisanal method. The best durum wheat semolina arrives and is analyzed at each delivery to verify that it has the characteristics of excellence required for proteins, gluten and ash. The dough and pre-dough are vacuum-packed, very slowly and using the purest water from the Lattari Mountains of Gragnano. The drawing is exclusively bronze and the drying lasts from 24 to 52 hours, depending on the format, with temperatures that never exceed 48 degrees.
This is not just any pasta: Paccheri di Afeltra are produced with only 100% Italian wheat, bronze-drawn and dried slowly.
Pacchero was born in Gragnano and is its historic ancient format. Once known as the “pasta of the poor” because a few large paccheri were enough to fill the plate.
The artisanal processing, the bronze drawing and the slow drying guarantee this format the right degree of roughness, to perfectly embrace your favorite sauce. Try them with a traditional Bolognese sauce or baked, stuffed with ricotta and spinach.
